		<description>Thanks for the information about cleaning, preparing and cooking hen of the woods mushrooms. Last night we used them in a risotto Since your post mentioned their distinct flavor, I was careful about how many I added to the risotto - 2-3 oz. were perfect (for 1 c. rice). We had leftover duck stock from Christmas dinner - so we used 1 c. duck stock &amp; 3 c. water, the stock, butter and parmesan were a perfect complement for the mushrooms.</description>
