After a little holiday hiatus we’re back with a new episode of Prime Cuts TV.  On today’s episode we explore the importance of letting steak rest before and after cooking and how that affects the overall quality of the steak when it is served.

There is a lot of background noise but hey, we’re a real steakhouse and we were busy :)

    Nice video. So which preparation is most preferable, or is it an individual preference thing? I always let my steaks rest before and after.

    For the cold one, is it less or more juicy. If all the juice (blood) runs out after slicing, wouldn’t it be dryer to the taste (if you don’t sop up the juices)?

    Great advice, always, always cook steak from room temperature and leave it to rest when cooked for that perfect juicy steak…… Chris

    @Patti – A lot of people cut into the center of a steak to check for doneness which then can ruin it if it needs to cook more. That is exactly how I was taught by my parents but I decided to take a different route ;)

    @Chris Suspect – You should let the steak rest before and after cooking to make it the juiciest and cooked properly throughout to the level of doneness that you prefer.

    Thanks for this! Awesome! But I have a possibly dumb follow up question. After resting the steak after grilling, how do you reheat it to serve?
