Fried Rice is something that I make at least 3 times a week (my husband is obsessed). And I always wondered why sometimes its mushy. Usually I cook a bunch of rice and use some immediately for fried rice and then use the rest throughout the week.

And now I realize why I would get mushy rice sometimes, it wasn't refrigerated. I love this recipe and especially this one tip, now my rice won't ever be mushy!
