A Trip to the Philippines

Veteran readers of this blog know that in my old position, before joining New Marketing Labs, I traveled to the Philippines 3-4 times per year.  Though the flight sucked (about 20hrs long) and the time difference was rough (12-13hrs ahead of ET), one of the great things was that I got to travel to a completely different culture and try tons of new food.  Being a true foodie and a restaurateur, this is a dream come true.  By indulging in other cultures, especially if you can go to the actual country, you have the chance to expand your palette, come up with new ideas for recipes, and gain new appreciations.

Now that I’ve moved on in my career, I’m not sure if/when I’ll ever have the opportunity to travel back to the Philippines.  One of the mistakes I made was never filming any video.  When I was there, I was running around so crazy and so sleep deprived, I never thought of shooting any content that I could share here.  Then a couple days ago I received an email on behalf of the Travel Channel promoting the upcoming episode of “No Reservations” with Anthony Bourdain.  The episode, airing Monday, February 16th at 10p ET, takes Anthony to the Philippines in many of the same communities that I traveled to.  If you ever wanted to learn more about the Filipino culture and food, check out the episode.

Prime Cuts TV – An Argentine Twist on Beef Negimaki

Earlier today we decided to ping Justin’s network to see what we should do for a new episode of Prime Cuts TV.  Chris Brogan responded and said he wanted to see a new twist on something old.  We racked our brains for a little while, came up with a ton of ideas for new posts and then finally came up with the idea to do an Argentine twist on beef negimaki.  Beef negimaki is a traditional Japanese dish consisting of beef marinated in a soy/teriyaki sauce and rolled with scallions.

This happens to be our longest episode so far of Prime Cuts TV so we hope you enjoy.

Prime Cuts TV – How to Make Fire-Roasted Sweet Onions

On today’s episode of Prime Cuts TV we show you how to make rustic-style fire-roasted sweet onions.  Instead of using the grill surface, we actually show you how to make the sweet onions by placing them inside of the fire to roast.  These are a great addition to a cheeseburger, steak sandwhich, pork chops, and many many other dishes.

Note: There is a lot of background noise due to working near our hood fans and we had several tables in the steakhouse at the time of filming.  We’re also working on improving the lighting in the kitchen for episode shoots.  But, hey, we’re a working kitchen, not some TV set :)

Prime Cuts TV – The Importance of Letting Steak Rest

Prime Cuts TV – Ordering Different Cuts of Steak

On today’s episode of Prime Cuts TV we wanted to discuss ordering different cuts of steak.  With so many options depending on the type and quality of restaurant you visit, it can be a little confusing.  Also, you may not know really what to order and have only been ordering the same cut of steak because that’s all you know.  Well, today we explain a few of the more popular cuts so that hopefully your next adventure out, you can try something different.

Learn How Hot Dogs Are Made

So, have you ever wondered how hot dogs are made?  It always seems to be one of those foods that everyone knows they don’t want to know what they’re eating.  We’ve both known for years what’s in hot dogs yet it doesn’t stop either of us from throwing some down on a grill every summer or buying them at a baseball game.

Hot dogs have always represented “mystery meat” to a lot of people even though they never really knew how hot dogs were made.  You knew it couldn’t be really great meat you were eating but it tastes sooo good in between a toasted bun with mustard, onions, and all of the other great toppings.

Well today we finally found a video that shows you exactly how hotdogs are made.  It’s one of those videos that you know you really don’t want to watch, you’d rather not know, but you know you’re going to watch it.

Prime Cuts TV – How to Sharpen a Knife Using a Wet Stone

A couple weeks ago we showed you how to properly use a sharpening steel to keep your knives in good shape in between more intense sharpenings.  The best way to sharpen your knife is to use a wet stone.  In today’s Prime Cuts TV we show you how to properly sharpen a knife on a wet stone.  In between wet stone sharpenings, make sure you continue to use the sharpening steel to keep your knives razor sharp.

As always, please be very careful when handling any kitchen knives.

Prime Cuts TV: How to Make Mate
